Instructions

  1. Prepare Chickpeas and Melt Chocolate: Drain and rinse one can of chickpeas thoroughly. Melt one cup of vegan dark chocolate chips in the microwave or on the stovetop using a double boiler, stirring until smooth.
  2. Blend Ingredients: Add the drained chickpeas, nut or seed butter, and melted chocolate to a food processor or high-speed blender. Blend for 45-60 seconds until the mixture is smooth and well combined.
  3. Scoop and Freeze: Using a cookie scoop, portion the mixture onto a baking sheet lined with parchment paper. Freeze the scooped batter for 15-20 minutes to firm up.
  4. Form Truffle Balls: Remove from the freezer and roll each scoop into smooth balls. Place the balls back onto the parchment-lined baking sheet and freeze for an additional 10 minutes to set.
  5. Melt Coating Chocolate: Meanwhile, melt the additional one cup of vegan dark chocolate chips with one tablespoon of coconut oil until smooth and glossy.
  6. Coat the Truffles: Remove the truffles from the freezer one by one and dip them thoroughly into the melted chocolate coating. Return the coated truffles to the baking sheet lined with parchment paper.
  7. Add Toppings and Final Freeze: Optionally, sprinkle desired toppings such as cacao nibs, shredded coconut, or nuts onto the coated truffles. Freeze the truffles again until the chocolate hardens completely.
