Instructions
- Prepare Chickpeas and Melt Chocolate: Drain and rinse one can of chickpeas thoroughly. Melt one cup of vegan dark chocolate chips in the microwave or on the stovetop using a double boiler, stirring until smooth.
- Blend Ingredients: Add the drained chickpeas, nut or seed butter, and melted chocolate to a food processor or high-speed blender. Blend for 45-60 seconds until the mixture is smooth and well combined.
- Scoop and Freeze: Using a cookie scoop, portion the mixture onto a baking sheet lined with parchment paper. Freeze the scooped batter for 15-20 minutes to firm up.
- Form Truffle Balls: Remove from the freezer and roll each scoop into smooth balls. Place the balls back onto the parchment-lined baking sheet and freeze for an additional 10 minutes to set.
- Melt Coating Chocolate: Meanwhile, melt the additional one cup of vegan dark chocolate chips with one tablespoon of coconut oil until smooth and glossy.
- Coat the Truffles: Remove the truffles from the freezer one by one and dip them thoroughly into the melted chocolate coating. Return the coated truffles to the baking sheet lined with parchment paper.
- Add Toppings and Final Freeze: Optionally, sprinkle desired toppings such as cacao nibs, shredded coconut, or nuts onto the coated truffles. Freeze the truffles again until the chocolate hardens completely.
- Storage and Serving: Store the finished truffles in the refrigerator for 7-10 days or in the freezer for 30-60 days. Enjoy chilled as a rich, chocolatey treat.
