Instructions

  1. Prepare the crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with the butter. Press the mixture into the bottom of a 9-inch springform pan, pressing it firmly into the base and up the sides slightly. Bake the crust in the preheated oven for 8-10 minutes, then remove it from the oven and allow it to cool completely.
  2. Make the filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy. Gradually add the sugar and continue beating until fluffy. Once the eggs are fully incorporated, add the sour cream and flour (if using), and mix until smooth.
  3. Assemble the cheesecake: Pour the cream cheese filling over the cooled graham cracker crust in the springform pan. Smooth the top with a spatula. Tap the pan gently on the counter to remove any air bubbles.
