Description
Cheesecake Popsicles Cookies and Cream combine the creamy richness of cheesecake with crunchy chocolate sandwich cookies. A perfect frozen treat for hot days or a sweet indulgence any time of year.
Ingredients
1 1/2 cups cream cheese, softened
1/2 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup sour cream (for a tangy kick)
10–12 chocolate sandwich cookies (like Oreos), crushed
Pinch of salt (optional, to balance sweetness)
Instructions
- Prepare the Mixture: In a large bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer. Add the heavy cream, powdered sugar, vanilla extract, and sour cream. Mix everything together until smooth and creamy. Adjust sour cream for more tang if desired.
- Add the Cookies: Crush the chocolate sandwich cookies into chunks or crumbs, and fold them into the cheesecake mixture, ensuring even distribution.
- Fill the Molds: Spoon the cheesecake mixture into popsicle molds, filling them nearly to the top. Tap the molds gently on the counter to remove air bubbles and settle the mixture.
- Freeze the Popsicles: Insert popsicle sticks into the molds and freeze for at least 4-6 hours, or until completely frozen.
- Unmold and Serve: Run warm water over the outside of the molds for a few seconds to help loosen the popsicles. Gently pull them out and serve immediately.
Notes
These popsicles can be stored in the freezer for up to 2 weeks.
To prevent popsicles from sticking together, wrap them in parchment paper or place them in a freezer-safe container.
Customize with a swirl of chocolate sauce, caramel, or different cookies like graham crackers or chocolate chip cookies.
