Description

Caramel Apple Eclair Cake is a delightful no-bake dessert featuring layers of graham crackers, creamy French vanilla pudding, sweet apple pie filling, and a luscious caramel topping. This crowd-pleasing cake offers a perfect blend of textures and flavors, making it an ideal treat for gatherings and easy to prepare ahead of time.

Ingredients

Apple Layer

  • 41 ounces canned apple pie filling, sliced into smaller pieces

Pudding Layer

  • 4 cups cold whole milk
  • 6.8 ounces package French vanilla instant pudding mix (2 packages)

Base and Layers

  • 14.4 ounces package graham crackers (approximately 3 packets)

Topping

  • 20 ounces caramel sundae topping

Instructions

  1. Prepare the Apple Pie Filling: Cut the apple slices in the canned apple pie filling into smaller pieces to ensure even layering and ease of eating.
  2. Make the Pudding: In a large mixing bowl (4-5 quarts), add the cold whole milk. Sprinkle both French vanilla pudding mix packages over the milk. Using a handheld mixer on low speed, mix for 2 to 2 ½ minutes until the pudding thickens.
  3. Layer the Base: Break graham crackers as needed to fit a single layer into the bottom of a 9×13 baking dish.
  4. Add First Apple Layer: Spoon half of the cut apple pie filling evenly over the graham cracker layer.
  5. Add First Pudding Layer: Spread half of the prepared pudding over the apple pie filling, smoothing it out with a spoon or offset spatula.
  6. Repeat Layers: Add a second layer of graham crackers, followed by the remaining apple pie filling and pudding, spreading each evenly.
  7. Top with Graham Crackers: Place the final layer of graham crackers over the last pudding layer.
  8. Add Caramel Topping: Spread the caramel sundae topping evenly over the top graham cracker layer.
  9. Chill: Loosely cover the cake and refrigerate for at least 4 hours to allow the layers to set and flavors to meld.
  10. Serve: Use a sharp kitchen knife to cut the cake into 3 slices by 5 slices. For easy slicing, run the knife under hot water and dry it off before cutting. Store any leftovers covered in the refrigerator for up to 3 days.

Notes

  • Storage: Keep leftovers covered in the refrigerator for up to 3 days.
  • Tip for Grahams: Use broken graham cracker pieces to fill gaps or uneven edges in layers.
  • Easy Slicing: Warm a sharp kitchen knife under hot water, dry it, and then slice to glide through layers cleanly.
