Made with old-fashioned oats, ripe bananas, fresh or frozen blueberries, and naturally sweetened with honey or maple syrup, these baked oatmeal cups are moist, flavorful, and easy to prepare.
Ingredients
Dry Ingredients
- 3 cups old-fashioned rolled oats
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Wet Ingredients
- 1 cup mashed bananas (2-3 ripe bananas)
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup honey (or maple syrup)
- 2/3 cup almond milk (or milk of your choice)
Fruits
- 1 and 1/2 cups blueberries (fresh or frozen)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a standard muffin pan with baking spray or line it with paper liners to prevent sticking, then set it aside.
- Mix Wet Ingredients: In a large bowl, combine the mashed bananas, egg, honey, vanilla extract, and almond milk. Whisk thoroughly until you have a smooth, homogeneous mixture.
- Add Dry Ingredients: Add the rolled oats, baking powder, salt, and cinnamon to the wet mixture. Whisk gently until everything is evenly combined but do not overmix to keep the texture tender.
- Fold in Blueberries: Carefully fold in the blueberries, whether fresh or frozen. If using frozen, fold gently to avoid coloring the batter.
- Fill Muffin Cup: Spoon the batter into the prepared muffin cups, filling each about three-quarters full. Optionally, add a few extra blueberries on top for garnish.
- Bake: Bake in the preheated oven for 25-30 minutes. Check doneness by inserting a toothpick in the center; it should come out clean. If using frozen blueberries, you may need to add a few more minutes to the baking time.
- Cool: Allow the baked oatmeal cups to cool in the pan for 5-10 minutes, then transfer them to a wire rack to cool completely. This avoids sogginess and helps them set nicely.
- Store: Store the cooled baked oatmeal cups in an airtight container in the refrigerator for up to 5 days, making them ideal for meal prep or quick snacks.
Notes
- You can use fresh or frozen blueberries. If using frozen, do not thaw them beforehand and fold them gently into the batter to prevent the color from bleeding.
- Let the baked oatmeal cups cool completely before storing; this prevents moisture buildup that can cause sogginess.
- You may substitute almond milk with any milk of your choice depending on dietary preferences.
- Adding a few blueberries on top before baking adds a nice visual appeal.
