Ingredients

4 boneless, skinless chicken breasts

2 medium zucchinis, sliced into rounds

1 cup cherry tomatoes, halved

1/2 cup black olives, pitted and sliced

1/2 cup crumbled feta cheese

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

Fresh basil or parsley, chopped (optional garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13‑inch baking dish.
  2. Season chicken breasts with garlic powder, onion powder, paprika, dried oregano, salt, and pepper. Drizzle with 1 tablespoon olive oil.
  3. Arrange sliced zucchini and halved tomatoes around the chicken in the dish. Scatter sliced olives over everything.
  4. Drizzle remaining olive oil over veggies, then season with additional oregano, salt, and pepper. Toss lightly to coat.
  5. Cover the dish with foil and bake for 25–30 minutes, until chicken reaches 165°F (74°C).
  6. Remove foil, sprinkle crumbled feta over the chicken and vegetables.
