Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1.5 pounds lean ground beef
- 2 tablespoons taco seasoning
- 2 cans corn, drained
- 1 cup red enchilada sauce
- 3 cups beef broth
- 4 ounces cream cheese, softened and cut into cubes
- 1/2 to 1 cup shredded sharp cheddar cheese
Toppings
- Shredded cheese
- Sour cream
- Cilantro
- Avocado slices
- Tortilla chips
Instructions
- Sauté Aromatics: Heat a large pot over medium heat and add the olive oil. Once hot, add the diced onion and minced garlic, sautéing for a few minutes until the onion becomes soft and translucent.
- Cook Ground Beef: Add the lean ground beef and taco seasoning to the pot. Cook, stirring occasionally, until the beef is browned and no longer pink, about 5 to 7 minutes.
- Add Remaining Ingredients: Stir in the drained corn, red enchilada sauce, beef broth, and softened cream cheese. Mix well until the cream cheese is fully melted and incorporated into the soup.
- Simmer to Thicken: Reduce the heat to low and let the soup simmer gently for 20 minutes to allow flavors to meld and the soup to thicken.
- Finish with Cheese: Stir in the shredded sharp cheddar cheese until melted and combined throughout the soup.
- Serve and Garnish: Ladle the soup into bowls and top with your choice of shredded cheese, sour cream, fresh cilantro, avocado slices, and tortilla chips for added texture and flavor.
Notes
- The cream cheese can be substituted with sour cream for a slightly different tangy flavor.
- Use low-sodium beef broth to control salt levels if desired.
- For a spicier soup, add a pinch of cayenne pepper or use a spicy enchilada sauce.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated on the stovetop or microwave.
- For a gluten-free version, confirm that taco seasoning and enchilada sauce are gluten-free.
