Description

Baked Feta Eggs are a simple yet flavorful breakfast or brunch dish combining creamy, tangy feta cheese with eggs, all baked to perfection. The feta melts into the eggs, creating a rich, savory base, making this dish comforting and satisfying.

Ingredients

4 large eggs

1/2 cup crumbled feta cheese

1 tablespoon olive oil

1 tablespoon fresh herbs (parsley, dill, or thyme), chopped

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional, for a little heat)

Fresh tomatoes (optional, for serving)

Toasted bread or pita (optional, for serving)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a small baking dish or individual ramekins with olive oil or cooking spray.
  2. Prepare the feta: In the greased baking dish, add the crumbled feta cheese. Spread it out evenly across the bottom of the dish.
  3. Crack the eggs: Carefully crack the eggs over the feta cheese, making sure to keep the yolks intact. You can either crack all the eggs into one dish or use individual ramekins for serving.
  4. Season: Drizzle the olive oil over the eggs and season with salt, pepper, and red pepper flakes (if using). Sprinkle the fresh herbs on top for added flavor and a touch of color.
  5. Bake: Place the baking dish in the preheated oven and bake for 12-15 minutes, or until the egg whites are set and the yolks are still slightly runny. For firmer yolks, bake for an additional 2-3 minutes.
  6. Serve: Once the eggs are done, remove the dish from the oven and let it cool for a minute. Serve with fresh tomatoes, toasted bread, or pita for dipping into the runny yolk.
  7. Enjoy: Dig in and enjoy the creamy, savory goodness of baked feta eggs!

Notes

For extra flavor, add sautéed spinach, mushrooms, or bell peppers before cracking the eggs.

If you prefer more spice, add a dash of hot sauce or chili oil before baking.

Make ahead: Prepare the feta and season it the night before, but crack the eggs just before baking.

Try different cheeses like goat cheese or mozzarella for a variation.
