Description

Ingredients

2 Tbsp butter or olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

2 Tbsp all-purpose flour

3 cups vegetable or chicken broth

1 cup milk (dairy or unsweetened plant-based)

1½ cups shredded sharp cheddar cheese

½ tsp dried thyme (or 1 tsp fresh)

Salt and black pepper, to taste

Optional garnish: chopped chives, extra cheese, or apple slices


Instructions

  1. In a medium pot, melt butter or warm oil over medium heat. Add chopped onion and cook until softened, about 5 minutes. Stir in garlic and cook for another minute.
  2. Add diced apples and thyme; sauté for 3–4 minutes. Sprinkle flour over the mixture, stir to coat, and cook 1–2 minutes.
  3. Gradually pour in broth, stirring to avoid lumps. Simmer for 10 minutes until apples are tender.
  4. Use an immersion blender to purée the soup to desired texture.
  5. Reduce heat to low. Stir in milk, then gradually add cheese, stirring until melted. Season with salt and pepper.
  6. Ladle into bowls and garnish with chives, cheese, or apple slices. Serve warm.

Notes

Add nutmeg or cayenne for a spice hint.

Use Gruyère, smoked cheddar, or Gouda for different flavor profiles.

Make it vegan with plant-based milk, cheese, and oil instead of butter.

For a creamier texture, stir in heavy cream or sour cream at the end.
