Ingredients
1 can (14.75 oz) salmon, drained and flaked (skin and bones removed if preferred)

1/4 cup finely chopped bell pepper (optional)
1 egg
1 tablespoon mayonnaise (or Greek yogurt for a lighter option)

1/2 teaspoon garlic powder
1/2 teaspoon dried dill or parsley (or any herb you prefer)

- Prepare the Salmon Mixture: In a medium bowl, combine the drained and flaked salmon, breadcrumbs, chopped onion, bell pepper (if using), egg, mayonnaise, Dijon mustard (if using), lemon juice, garlic powder, and dried dill or parsley. Season with salt and pepper to taste. Mix everything until well combined. If the mixture feels too wet, add more breadcrumbs until it holds together well.
- Form the Patties: Using your hands or a spoon, form the salmon mixture into small patties, about 2-3 inches in diameter. You should get about 6-8 patties, depending on the size.
- Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
- Cook the Patties: Lightly spray the air fryer basket with olive oil or non-stick spray. Arrange the salmon patties in a single layer in the basket, making sure they are not overlapping. Lightly spray the tops of the patties with olive oil spray.
- Air Fry: Cook the patties at 375°F (190°C) for 10-12 minutes, flipping halfway through, until they are golden brown and crispy on both sides.
- Serve: Once cooked, carefully remove the patties from the air fryer. Serve them with your favorite dipping sauce (like tartar sauce, aioli, or lemon wedges) and a side of vegetables, salad, or rice.
